I still remember my first visit to Café Historias. As I stepped onto the farm I was instantly captivated by the charm of the place. We spent the afternoon with Don Diego, learning about the intricate process of coffee cultivation and savoring the rich history of Jardín. What I found fascinating was learning how Don Diego separates the coffee beans into 3 distinct quality levels.  But, the highlight of our visit was sampling the freshly brewed coffee having undertaken a crash course in one of Colombia’s most cherished rituals.  A memory I’ll cherish forever.
